Dinner tonight: rigatoni with chunky veggie sauce
buckwheat and kamut rigatoni
1 pack of sliced mushrooms
1 bunch of asparagus (cut into bite-sized chunks)
1 green bell pepper (cut into bite-sized chunks)
1 jar artichoke hearts
1 jar pasta sauce (Newman’s Own Roasted Garlic)

"Grilled" tofu & pineapple
The other night my roommates and I made dinner, including “grilled” tofu & pineapple. I really had no idea what I was doing, just a vague idea of what I wanted, but it turned out pretty good.

I wish I had a grill...
I had dinner with some friends last night that have a grill. Grilled corn on the cob, eggplant, portobello mushrooms (with garlic and balsamic), and a salad with grilled peaches and candied nuts. With strawberries, raspberries, and vegan whipped cream for dessert. It was amazing, to say the least.
If you have a grill, take advantage of it. And take advantage of your farmer’s markets, too.
